Ch-Ch-Ch -Cherry Bomb

Sake Mom is glad to be moving on from 2011.
But not forgetting the lessons she learned and the kindness she felt from her friends and family in a crazy -mind blowing (literally) year.

Soooo time to get to the business of the day.
I wanted to share with you something that has been very fun and therapeutic for me .
The magic that is HOT Pepper Jelly.

Today I made Cherry Bomb Pepper Jelly.

You will need 1/2 cup of hot pepper of your choice.
3/4 cup bell pepper
1 1/2 cups apple cider vinegar
6 1/2 cups sugar
1 -6 oz bottle or gel of pectin
1/4 tsp of salt


Place mason jars in large pan and cover with water.
Set to low to med heat to sterilize jars but don't bring to a boil.

I took the seeds out of the Cherry Bombs -only b/c they were HOT. Purchased at Deklab Farmer's Market
It is really up to how you like-
When I use Thai Chili peppers - I don't take seed out

Place peppers in food processor. I grind all of them up aside from 1 or 2.
Chop those separate by hand and add to pot to have pretty chunks floating around

I pour 1/2 cup of Vinegar in processor to get all the peppers and pour into large pot.


Combine peppers-(the rest) of the Vinegar-sugar- and salt
into LARGE pan
Bring to a HARD boil.

**meanwhile take jars out of water and place on towel. I pour hot water over the lids to sterilize.
Do not get rid of your water b/c you will need it to seal the lids. You can add a little more now b/c it will need to cover jars.**


Once you are at a hard boil..Boil for 1 minute.
A hard boil keeps boiling even when stirred
It will rise so make sure you picked a tall pot.

Remove from heat and let set for 5 minutes.
Add pectin and mix well !!

**You can do 9 oz of pection if you want it more solid. **

Pour into your hot jars and seal.

To Seal. Place lids on jelly jars- screw rim on.
Place back into your hot water-it should be coming to a boil..raise heat and boil for 10 minutes.
Take out of hot water and place on counter.
Wait for the pop noise and they are sealed.

Enjoy.

I used all Organic ingredients and only 5 cups of sugar in this recipe b/c that is all I had ;)

Just have fun trying diff't peppers.
You can pretty much throw anything into the mix.
Peaches and Jalepenos
Canned pineapple, ginger and cayenne pepper
Thai Chilis
